Breakfast Casserole
In my opinion, it is the greatest breakfast casserole I have ever had! I don't remember where we originally found the recipe, but we have been making it for years. What makes it so great is that it has all the breakfast favorites: waffles, sausage, cheese, maple syrup, and egg. The egg and maple syrup soak into the waffles to create an amazing flavor and you can never go wrong with sausage and cheese. I hope you enjoy this recipe as much as I do and maybe it will even become a family favorite like it has in my family.
Breakfast Casserole
Ingredients
8 frozen waffles
1 pound sausage (we use turkey)
2 cups cheddar cheese
6 eggs
1 1/2 cups milk
1/4 cup maple syrup
Dash of hot sauce
Salt
Pepper
Instructions
Preheat oven to 350F. Take the 8 frozen waffles and place them on a cookie sheet. Bake for 10 minutes on each side. While the waffles are in the oven, cook 1 pound of sausage and break it up to be ground. Grate 2 cups of cheddar cheese as well.
To make the custard, add the eggs, milk, maple syrup, hot sauce, salt, and pepper to a medium-sized bowl. Whisk until combined.
When everything is ready, spray an 8x8 pan with cooking spray. Put 4 waffles on the bottom of the pan, then half of the sausage, then half the cheese. Repeat. You should now have waffles, sausage, cheese, waffles, sausage, cheese layers. Give the egg mixture one final whisk before immediately pouring all of the mixture on top. Cover with plastic wrap and weigh it down with cans or some boxes. Put in the fridge overnight.
In the morning, remove plastic wrap and add foil. Cook at 375F for 40-45 minutes. Make sure the middle is cooked through because you don't want any raw eggs. Eat and enjoy!
