Moosewood's House Dressing

I would love to take credit for creating this amazing concoction, but this recipe is from the "Moosewood Restaurant Favorites" cookbook. Moosewood is a vegetarian restaurant in Ithaca NY. This salad dressing is incredible! You may be a little hesitant to try it since it is green, but everyone in my family loves it. For someone that isn't the biggest fan of vegetables, it is one of the best salad dressing I have ever had. 


Moosewood's Creamy Green Dressing



Ingredients

3/4 cup vegetable oil

3 tablespoon apple cider vinegar

1 tablespoon honey or maple syrup

2 teaspoon Dijon mustard

1/2 teaspoon salt

1/2 cup packed fresh spinach leaves

1/4 cup packed fresh basil leaves, more to taste

3/4 cup milk







Instructions

Combine all of the ingredients except milk in the blender and whirl until smooth. With the blender running, pour the milk in a steady stream. The dressing will thicken and be a lovely shade of green. Add salt and more basil to taste if you want. 

Although you can serve the dressing immediately, you can let it sit for a while so the flavors can meld. It will keep for about a week refrigerated.
