Pineapple Chipotle Pork Sandwiches
This recipe is similar to a sloppy joe, but it is even better because... it has pineapple! The sandwich has a wonderful flavor and it doesn't take a long time to make. It reminds me of a luau in every bite. I suggest eating it with coleslaw on the sandwich to add some needed crunch. This recipe is from Hello Fresh.

Pineapple Chipotle Pork Sandwiches
Ingredients
4 scallions
1 lime
8 oz. canned pineapple
20 oz. ground pork
4 potato buns
2 tbsp. sweet and spicy BBQ seasoning
1 tsp. chipotle powder
8 tbsp. ketchup
1 tbsp. cornstarch
2 units beef stock concentrate
Instructions
Wash and dry all produce. Trim and thinly slice scallions, separating whites from greens. Zest and quarter lime. Drain pineapple over a small bowl, reserving juice. Halve buns and toast lightly.
Heat a drizzle of olive oil in a large pan over medium-high heat. Add the pork and a big pinch of salt; cook, breaking up meat into pieces, until browned, 3-5 minutes (it'll finish cooking later). Add the scallion whites, BBQ seasoning, and 1/4 tsp. chipotle powder (add more if you like things spicy) to the pan with the pork. Cook, stirring, until fragrant, 1 minute.
Add the pineapple, ketchup, beef stock concentrate, cornstarch, pineapple juice, 1/2 cup water, and a big squeeze of lime juice to the pan. Simmer, stirring, until mixture has thickened and the pork is cooked through 2-3 minutes. Turn off the heat.
Divide pork filling and add some slaw between buns. Eat and enjoy!
