Peanut Butter Bars
My mom decided to make these over the weekend and they were amazing. There was a thin layer of frosting over the top of the bars and the oats in the bar were perfection. I would definitely make these again. When we have picnics again, this would be a great addition.
Peanut Butter Bars
This recipe is from Aileen Paul and Arthur Hawkins's book "Kids Cooking a first cookbook for children."
Bar Ingredients
1 cup quick-cooking oats
1/2 cup sugar
1 egg
1/2 cup firmly packed brown sugar
1/2 teaspoon baking soda
1/3 cup peanut butter
1/2 cup butter
Bar Instructions
Preheat oven to 350F. Grease a 9x13 inch pan. Measure all the ingredients listed (except egg) and combine in a large bowl. Break the egg into a small bowl and beat it lightly with a fork, so that the whites and yolk are blended. Add to mixture. With a mixing spoon, mix until crumbly.
Press mixture firmly into the greased pan. Place in the oven for 20-25 minutes. When done, take out of the oven for cooling. In the meantime, you can make the frosting.
Frosting Ingredients
1/4 cup softened butter
1/4 peanut butter
1 3/4 cups confectioners' sugar
2 to 3 tablespoons milk
1 teaspoon vanilla
Frosting Instructions
In a mixer, put the butter and peanut butter in and combine. Add the confectioners' sugar gradually on a low setting. Add 2 tablespoons of milk and the vanilla. Stir until smooth. If you want it to be smoother, add another tablespoon of milk slowly.
When the bars are completely cooled, put the frosting on the bar, making sure it is evenly spread all over. Cut into squares and serve.
