Our Super Bowl Feast

Due to the pandemic, the Super Bowl was different this year. The stadium had WAY fewer people in it than normal plus some cardboard cutouts. We couldn't go to friend's houses for a watch party. That does not mean we have to give up having delicious food while watching the Super Bowl. This year my family and I tried food we never made before and they were AMAZING! 



Chicken Fajitas


There are a few recipes in this video. The chicken fajita is from 0:08-1:43.


My dad found this recipe on Facebook as a video. The people who made the video are Twisted. I have included the video, but I added written instructions. My instructions probably don't make much sense, so I suggest watching the actual video. 


Fajita Ingredients

5 sliced mixed peppers

3 sliced onions

4 sliced chicken breasts

2 tablespoons of fajita seasoning

3 tablespoons olive oil

1 teaspoon melted butter

9 flour tortillas

2 cups cheddar cheese

2 cups of spicy tortilla chips


Sauce Ingredients

1 cup sour cream

2/3 cup mayonnaise

1/2 cup diced jalapeƱos 

1 tablespoon of fajita seasoning

1 tablespoon of honey

1 lime juice from a lime


Fajita Instructions 

On a sheet pan, put the peppers, onions, and chicken breaths on the pan. Then add the fajita seasoning and the olive oil. Mix until peppers, onion, and chicken are covered. Bake at 400F for 25 minutes. 

On a separate sheet pan, paint the melted butter on the bottom of the pan. Then lay the tortillas down on the pan to have no spots. Some of the tortillas need to hang off the edge. Put 1 cup of cheese on the tortillas. Then put half of the pepper, onion, chicken mixture on top of the cheese. On top of the pepper, onion, chicken, add the crushed up spicy tortilla chips and then add the rest of the peppers, onions, and chicken. After that, add the rest of the cheese. Fold over the hanging parts of the tortillas to cover the top of the dish. Then put some parchment paper on top of the dish and another sheet pan to make sure the fajita stays together. Bake again at 350F for 30 minutes. 

When out of the oven, take the sheet pan off the fajita. Cut the fajita however you would like. 


Sauce Instructions

Put the sour cream and mayonnaise in a bowl. Then add the jalapeƱos, fajita seasoning, honey, and lime juice. Mix everything until combined. Dip the fajita into the sauce and take a bite. Enjoy!


Pigs in a Blanket

Ingredients

12 hot dogs (1 package)

2 packages of crescent rolls (we used Pilsbury crescent rolls)

A skillet 

That is it. It is that simple.


Instructions

Preheat oven to 375F. Cut the hotdogs into thirds. Cut crescent roll triangles in half lengthwise. Roll crescent roll dough around the hot dog pieces, beginning that the wider end. Arrange the pigs in blankets in a skillet in tight circles around the skillet. Leave space in the middle to put your favorite dipping sauce there after baking. We put the sauce from the chicken fajitas and that was fantastic. Bake for 15-20 minutes until the dough is puffy and golden. 

After it cools, pick up one amazing pig in a blanket and dip it in your favorite sauce. Next, put the amazingness into your mouth and savor its great flavor. 


Crock Pot Chicken Buffalo Dip

We made a bunch of changes to the recipe. I typed my version and tap here for the original recipe.


Ingredients

2 huge chicken breasts 

2 (8 ounces) packets of cream cheese (we only used 1 packet of cream cheese and it was plenty)

3/4 cup hot sauce (we used Frank's)

3/4 cup ranch dressing

2 cups of shredded cheddar cheese

Chips for dipping and scooping


Instructions

Bake chicken in the oven until cooked at 375F. Let cool before shredding the chicken. 

In a bowl, mix the chicken, hot sauce, and cream cheese until it is all combined. Then add the ranch dressing and mix. Add 1-1/2 cup of cheese. Taste the mix to see if it needs more hot sauce. It depends on how spicy you want the dip. 

Pour the dip into the crockpot and sprinkle the remaining cheese on top. Keep heated on low. We used chips to eat it, but bread and crackers also work. We loved this recipe a lot and are looking forward to making the dip again.
