Instapot General Tso's Chicken

Hello again! I know it has been a while, but I have been busy with school, basketball, and the holidays. That is no excuse for my silence, but I am going to try to do better. No promises. 

This recipe is Instapot General Tso's chicken, so if you don't have an Instapot, this might not be a recipe you can try. General Tso's chicken is my favorite thing to order from an Asian Fusion restaurant. The only thing I don't usually like is that it is always fried and you don't get a lot of chicken. The chicken in this recipe is sauteed, not fried. The sauce is so flavorful and tastes really good with the chicken and rice. It might even be better than takeout General Tso's chicken. I hope you enjoy it as much as I do!



Instapot General Tso's Chicken

Serves 6. The recipe is from the Instant Pot Cookbook. 

Ingredients

1 teaspoon sesame oil

1 1/2 pounds skinless, boneless chicken breast and/or thighs, cubed

6 tablespoons rice vinegar

6 tablespoons soy sauce

1 clove garlic, chopped

1/4 teaspoon ground ginger

1/4 teaspoon crushed red pepper

3/4 cup hoisin sauce

4 tablespoons brown sugar

2 tablespoons cornstarch

2 cups cooked white rice



Instructions

Pour the sesame oil into the Instant Pot. Select Sauté and adjust to Normal. Add chicken to the pot. Cook and stir for 5 minutes or until the chicken is white (does not need to be cooked all the way through). Press Cancel. 

In a separate bowl, mix together the rice vinegar, soy sauce, garlic, ginger, crushed red pepper, hoisin sauce, and brown sugar. Pour the mixture over the chicken in the pot. Secure the lid on the pot. Close the pressure-release valve. 

Select Pressure Cook and cook at high pressure for 10 minutes. When cooking is complete, use a quick release to depressurize. Press Cancel. 

Select Sauté and adjust to Normal. Bring to a slight boil. Whisk in the cornstarch until the mixture turns thick and bubbly for about 2 minutes. Press Cancel. 

Serve the chicken over rice. Enjoy!
